Sloppy Vegan Garbanzo Bean, Olive and Mushroom Salad
Ingredients:
1 can garbanzo beans
1 can of pitted black olives
1 small can of sliced mushrooms
1/4 cup shredded coconut
1/8 cup milled chia seeds
1 – medium carrot
1/3-1/2 cup of raw pumpkin seeds
1 – lemon juice
1 – lime juice
Seasonings: Onion and garlic powder, lemon pepper, parsley, ginger powder, cilantro.
Directions: Take cans of garbanzo beans, whole olives (pitted) and sliced
mushrooms and pour of water, juice or brine, etc. and put into a mixing bowl.
Put in seasonings onion and garlic powder, lemon pepper, parsley, ginger powder and cilantro (olive oil optional). At one shredded carrot. Mix all the contents and eat immediately or place in small containers for lunch or snacks.
